Foraging through my freezer is always entertaining. At the moment there’s a haunch of venison (wedding present), lamb shanks, ox tongue, ox cheeks, beef bones for stock, fish head for stock, frozen wine ice cubes……
To say that the last week was dreich is something of an understatement. London has been engulfed in such a large raincloud that – although I can usually see over The City, as far as The Shard from my desk – I haven’t been able to see much further than the tree outside the window for days….
As far as ‘reining it in’ goes, I’m sure I could have done a bit better with this recipe. Chicken thigh could have been substituted for chicken breast. And instead of noodles, I could have used thinly-sliced cabbage, or grated butternut squash - a bit like Jamie does in his laksa recipe.
But hell, it’s better than pizza or lasagne.…
