So…if your innocent slumber party got a little out of hand, it’s a Sunday evening, and you’re feeling the tiniest bit fragile, then here’s a great recipe for a comfort food supper.
Source two courgettes.
Mine’s at the top. Tom’s is at the bottom.
Cut them in half, scoop out the seedy middle with a teaspoon, drizzle with oil, grind some pepper over the top, and roast at 200°c for 20 minutes.
In the meantime, defrost some blocks of bolognese. (Click here for the recipe) Only defrost the amount that you need - it’s not a good idea to reheat frozen bolognese more than once.
Take the courgettes out of the oven, fill with bolognese, and generously top with parmesan.
