Just a quiet night in watching Great British Bake Off, and not much in the fridge…so usually I really wouldn’t bother blogging…but then, against all odds, all my leftovers suddenly came together into the most magical supper, so thought I’d share it.
Ingredients
3 eggs
3 big chunks of frozen spinach
50g grated halloumi
freshly grated nutmeg
salt
pepper
Put the frozen spinach in the microwave for a couple of minutes. Squeeze any moisture out of it and leave to cool.
Crack your eggs onto the spinach, season with freshly grated nutmeg, salt and pepper, and use a fork to whisk everything together.
Heat some oil in a pan, and then pour the spinach mixture to form a layer on the bottom. After a couple of minutes of cooking, sprinkle the grated halloumi over half of the omelette.
When the halloumi is just starting to melt, fold the omelette in half. Cook for another minute, then fold the omelette in half again and tip onto a plate.
I was trying to work out how to get lemon into the recipe, as it’s a natural flavour to put with spinach and halloumi…but I couldn’t suss it out until I figured that the solution was to accompany everything with a pint of cool, homemade lemonade. (1:lemon juice, 1:sugar syrup, 2:water/ice). Delicious!
I love this kind of “make do” dinner. It almost always turns out to be some sort of comfort food.
We had a bottom of the barrel dinner last night too. Potatoes, cauliflower, bacon, garlic and cheese. All baked together with herbs and spices. It wasn’t pretty but it sure was tasty. Cheese makes everything good!
Homemade lemonade sounds divine. It sounds too simple to be true. I’m a bit embarrassed to admit that I have never made lemonade or even ice tea before. It’s always been store bought for me.
